If you are looking for a truly memorable wedding dish, try roasted chicken breasts stuffed with mushrooms, green onion, pepper, and sheep cheese, garnished with steamed vegetable and rice. The dish is easy to make and is characterized by a deliciously crispy skin and tender, juicy inside.  

You can use any type of mushroom, but we use brown mushrooms at our wedding catering company in Toronto for a much richer flavor. For the chicken, go for bone-in, skin-on chicken for the best flavour. The best sauce to serve with the dish is tomato soup, but you could also go with a seasoned béchamel sauce or cream of mushroom soup.

 

2. Chicken Aji de gallina with olives, egg and rice

Mix things up at your wedding with Chicken aji de gallina with olives egg and rice. Aji de gallina is a delicious Peruvian dish that gets its name from the famous aji amarillo peppers. The dish is traditionally served over rice with boiled yellow potatoes and black olives. You can also add eggs.

If you cannot find aji amarillo peppers, you could use another hot chile pepper, but add a yellow bell pepper for an authentic look. Serve the dish on clay plates. To serve, begin by platting up a portion of lice and then add the Aji de gallina. Put half a boiled egg on top of each portion and a black olive to garnish. Sprinkle parmesan on top for a truly amazing look.

The ever-versatile salmon is just as popular as chicken today, but it takes for an even more impressive recipe. Grilled Salmon Steak with Spinach, Tartare Cream and Lemon Wedges is a simple yet impressive dish to make your guests at a wedding. The ingredients are sunflower or vegetable oil, skinless salmon fillets, spinach, reduced-fat crème fraiche, lemon juice, caper, and flat-leaf parsley.

Once you season the salmon on both sides, put in a pan of hot oil and fry for about 4 minutes on each side until it is golden and the flesh is flaky. Cook the spinach and then serve the salmon on top of the spinach.

For the sauce, heat the crème fraiche in a pan gently and add a squeeze of the lemon juice, the capers and parsley and seasoning to taste. At our wedding catering company in Toronto, we serve the source over the fish and spinach and serve the meal with lemon wedges.

Wondering which inexpensive yet impressive dish can be served to wedding guests, consider roasted turkey breasts stuffed with Camembert cheese, served with rice, tomato and steamed spinach.  

Once you prepare the stuffing, place the cheese slices on half of turkey breast and cover the cheese with the stuffing. Use a buttered, ovenproof dish to roast the turkey after brushing it with melted butter. The meal takes about 30 minutes to prepare and about 40 minutes to cook.

If you are on a budget, you don’t have to serve French fries and all their empty calories to your wedding guests. Try baked eggplant served with tomatoes, garlic, and paprika. The crunchy dish tastes just like French fries and is a healthy snacking alternative.  

The ingredients, per eggplant, are 1 Teaspoon of Smoked Paprika, 1 Eggplant (1 ¼ pound), 2 tomatoes, Kosher salt, 4 minced garlic clove, Juice of ½ a lemon, 3 tablespoons of extra-virgin olive oil, and Cayenne pepper.

To make the dish, preheat the oven to 320F. Prick the eggplant in several places using a fork and then roast the eggplant and the tomatoes until charred on the outside and soft on the inside. This takes about 40 minutes. Once done, use a sharp knife to make lengthwise slits in the eggplant and let drain for about 10 minutes. Next, scrape the flesh off the eggplant into a bowl and discard hard seeds and skin and marsh it to a puree. Add the tomatoes, olive oil and paprika and over moderate heat, stirring occasionally for about 10 minutes until the liquid has evaporated. Finally, stir in the lemon juice and season with pepper and salt. Serve at room temperature or warm.

Rustic wood-fired pizza with roasted garlic and arugula is an unconventional yet interesting wedding dish. Once you have prepared the dough, spread Ricotta cheese on top and season with black pepper and the roasted garlic. Cook the pizza hot & fast, making sure you turn regularly so as not to burn the side that is facing the fire. Once the pizza is cooked and it has blisters, top up with fresh Arugula, Truffle oil, and Shaved Pam.
