We recently had the opportunity to sit down with Earls Restaurant’s own Cate Simpson to sample our way through summer at their 905 Hornby location in Vancouver, and it was a delectable dinner that had us loosening our belts – yet pining for more.
Upon arrival to their central downtown location (adjacent to the Scotia Theatres), we were greeted by Cate and instantly urged to taste test a few of their signature seasonal cocktails. One such option we chose was the classic margarita paired alongside their pineapple and ginger version. The zestiness of the ginger melded well with the sweetness offered by the pineapple – all expertly muddled together with housemade ginger syrup, freshly squeezed lime juice and finished with a spicy rim. We were amazed to learn that on average, Earls squeezes more than 5,000 limes in any given day! That’s a lot of margarita-fuelled fun.
Next up, some delicious culinary treats began to arrive, offering us an endless array of flavours to take in. One such surprise highlight of the evening was the guacamole prepared from scratch tableside.

We sampled their Champagne Berry and Spinach Salad (made with seasonal berries, goat cheese, and toasted almonds, grilled chicken, avocado and tossed in their champagne vinaigrette). Following suit, an assortment of share plates showed up at our table, including their Dominical Fish Tacos with grilled lime, and coriander marinated wahoo. This was followed by the outstandingly tasty Lobster + Prawn Roll, Earls’ take on the traditional New England-style sandwich; slices of grilled brioche stood utterly stuffed with a creamy lobster and prawn salad mixed with lemon aioli, parsley and capers.
For mains, we were treated to the Cajun Blackened Chicken prepared using their signature blackening spices, served with a warm potato salad on the side. One word: Delish. And what would a visit to Earls be without a taste of steak, grilled to perfection and loaded with all the desired fixings. Our choice for the night was their New York Striploin – done to perfection.
Finally, having all but reached our culinary limit, we managed to find room for a sweet finish to the evening and let Cate talk us into a sampling of their seasonal signature dessert. Who can say no to Berries and Cream? Biting into berries piled high and in between light shortbread cookies with almond crumble and vanilla cream cheese mousse, we were in food heaven at last.
