I’m sure many of you will relate when I say that my food and drink cravings are drastically affected by the seasons… and on Mother Nature’s mood. In the winter I’m all about hearty meals featuring lots of red meat and red wine, whereas the spring and summer call for lighter salads, seafood, ice cold beers, and easy sipping whites. Normally around this time of year I would have fully made the switch to lighter fare, but with Ms. Nature being characteristically unpredictable I have yet to commit to the change.
But double digits are finally making an appearance, which means that it’s time to pull in the reins and get back on track for lighter nights and skimpier wardrobe choices. Vegetable salads are trending around the city right now, making getting your nutritional fill so much easier with creative twists and flavour combos. Check out some of our favourite spring vegetable salad dishes available in Toronto right now; providing perfectly light and healthy choices for sunnier days. Happy munching!
Heart Salad: artichoke and palm hearts, sugar snap peas, grape tomatoes, red peppers and mushrooms with poppy seed dressing, served on a bed of mixed greens
Heart happy ingredients make for the perfect excuse to treat yo’self to a glass (or nine) of wine… it’s all about moderation (or so we’ve heard).
Brussels Sprout Caesar Salad: what is says on the tin
Get your Caesar fix with an extra nutritional kick from Brussels sprouts as the base. As a huge lover of Brussels sprouts, this makes us happy. And hungry.
Cavolo Nero: lacinato kale, zante currants, toasted pine nuts, pecorino, parmigiano, and lemon vinaigrette
We couldn’t not include this salad on our list as not only is it a View the Vibe favourite, but this nutrient-packed plate has earned the reputation as possibly the best salad in the city – as well as garnering its fair share of media coverage and foodie love. At least one member of our team stops by Gusto to get their kale fill at least once a week – good thing we’re in the neighbourhood! If you haven’t tried it, move it to the top of your foodie ‘to-do’ list… you can thank us later.
