I have a deep and long running fondness for kale chips: many years ago, before they were sold in grocery stores for extraordinary dollar amounts, I was living in Portland, OR, and fell in love with the crunchy, crispy, tasty and super healthy treats and never looked back. Portland is practically the capital of modern day hippies; only the original San Fran comes close to loving organic hemp seeds and living life barefoot as much as PDX.
So while kale wasn’t a trend for my earthy friends across the nation, it most certainly was a trend in North America in 2013. But it’s the new year! And we are celebrating food trends the healthy way by embracing the latest trendy vegetable: cauliflower! Christine Couvelier, executive chef and global culinary trendologist, gave the lowdown to Canadian Press: “I would say that cauliflower is the new kale and will definitely surpass kale this year. Kale had that buzz and everybody loves kale chips and how many restaurants have we seen that have kale on the menu, but cauliflower is certainly the huge buzz this year. Bigger than ever.”
So there you have it. Nutritionally dense and trendy cauliflower will be filling plates (and tummies) before you know it!
