I often have to eat on the run because I don’t have time to properly sit down and eat lunch or dinner. Last week I had to work late and I was starving. So I moseyed on over to Noah’s, which happens to be next door, and looked for something quick, easy and healthy. I ended up getting a salad but I also noticed a container from LIVE Organic Food called “veggie coconut bacon”. I am a coconut junkie so I had to pick it up. Well – all I can say is I’m going back for more. Delicious!!
Picture this: slivers of coconut flavoured with wheat-free tamari, olive oil, maple syrup and filtered water. I wouldn’t say it tastes like bacon but it does taste yummy. The whole flavour profile is coconutty, buttery, sweet and salty. I have been nibbling on them all week and also adding them into my salads. The beauty about this snack is that coconut is actually an oil that is very easy to digest and breaks down in your body much more easily than any other oil (according to my trainer). So when you look at the calorie/fat content it’s not scary! 25 calories per two tablespoons and only 1.5 grams of GOOD fat – you can’t feel guilty about that!
