When it comes to Mexican cuisine in the 6ix, there are plenty of places to choose from. From each district to neighbourhood, the options for authentic flavours are endless. Ever since its launch earlier this year, Birria Balam has taken the city by storm. And now, the Mexican pop-up is all set to transform into a restaurant space, Fonda Balam.

Birria Balam Mexican Pop-Up
With a short and limited menu, the pop-up has come to be known exclusively for their birria tacos. Customers can order them as individual items or it’s also available as a combo meal. The restaurant menu at Fonda Balam will feature the same, along with more exciting dishes. The combos that are available now comes with one consomé, two salsas and either three Quesa Birria or three Suave Tacos.
In terms of the visual branding, the restaurant will stick to Birria Balam’s signature colour palette and the Jaguar logo. The trio behind this venture is Chef Matty Matheson and former Quetzal chefs and couple Julio Guajardo and Kate Chomyshyn.
Fonda Balam is expected to open sometime in September 2021. As for their location? Customers can soon find them at 802 Dundas St. W. at Palmerston (Dundas and Palmerston). We don’t know about you, but we’re super excited!
