The Boulevard is now open, folks!
From the flirtatious seafood-inspired menu, to the sexy surroundings of a seated oyster bar and craft-cocktail nook, Boulevard Kitchen & Oyster Bar shines in the heart of downtown Vancouver. The overall concept of Boulevard is to bring to life the vision of internationally renowned Executive Chef, Alex Chen, who weaves together old world cuisine with new, innovative techniques that are bound to get you giggly and full of foodie fantasies.
Boulevard’s official opening last week marks Chen’s return to his old stomping grounds of Vancouver after his success with a top-10 finish representing Canada at the Bocuse d’Or culinary competition in Lyon, France in 2013. His long list of experience working with renowned restaurants across the United States and Canada have helped ground Chen’s unique culinary style, as well as his passion for seafood.
“I’m constantly inspired by the notion of generating a conversation about a dish or the enjoyment that can be had when someone takes that first bite and not only does it deliver flavour but rises up to exceed expectations,” says Chen. “I think it’s important that when a guest visits Boulevard that they experience lasting impressions. At Boulevard, we invite them to ask questions and be engaged.”
Just several of their popular menu items sourced from local, in-season ingredients include: fresh selections of seasonal oysters, wild shrimp ceviche drowned in zesty lime and cilantro, succulent roasted sablefish over beech mushrooms and creamy coconut rice, a lobster bouillabaisse dripping with saffron and gruyere, and a brown butter filet mignon with truffle parmesan cream corn. We hope that sums up the magic that is being stirred up at Boulevard.
Director of Operations, Steve Edwards, compliments Chen’s culinary vision, with an unparalleled attention to detail from the design right down to the service. Guests are greeted warmly and offered options (which we love), from casual dining at the bar tops or wrap-around outdoor patio, to a more formal experience in the lounge or private dining room. Boulevard Kitchen & Oyster Bar is open for an early breakfast from 6:30 in the morning, following by lunch from 11-2pm and dinner beginning at 5. The lounge is open until the wee hour of 1 for patrons to indulge in some decadent craft-cocktails (check out their signature Boulevardier with port barrel finished whisky, amaro and black walnut bitters).
