The special tasting menu that reflects the one prepared in New York sees an appetizer of Dungeness crab, Brooke trout roe, green apple, horseradish and brioche. Next up, a fish course of Pacific sablefish, chanterelles, corn, scallions, miso and bacon dashi, followed by a meat dish of roasted duck breast with chestnut, mushroom and fig. The taste of fall continues with Chef Hawksworth’s slow cooked beef short rib, served with veal tongue, parsnip and black pepper.
