I don’t know about you, but there are seldom things that will get me out of my warm bed in the morning when it’s a bone chilling -22 degrees outside (an Irish coffee is one of them, but we’ll leave that alone for now). Apart from 8am happy hour, a hot, delicious breakfast is pretty much the only thing that’ll keep me from rolling over and ignoring my alarm again. These delectable pancake “doughnuts,” made from sliced apple rings dipped in pancake batter, are the only thing yummy and hearty enough (while still tasting light and offering a healthy, nutritious start!) to help me get my day going sans grizzly grouchiness. Lattice some sweet maple syrup on top and I’ll actually flash a grin.
