It’s no secret Toronto is infatuated with Mexican cuisine. (Isn’t there something, like, 982 taco joints in the city?) The trend, which saw an epic peak in 2012/2013, is on point with our reverence for bold flavours and shareable delights. But there hasn’t really been an upscale version of South of the Border cuisine. Til now…
Officially opening on June 18th, Los Colibris is the latest restaurant from the minds behind other elevated fare like Little Anthony’s, Estiatorio Volos, and the hip tequila bar, El Caballito. Found at 220 King Street West, the 3,500 sq. ft. space will seat about 150, has two private dining rooms, and will have an El Caballito-adjoining 1,800 sq. ft. patio replete with a make your own taco station. Talk about interactive eats!

Executive Chef Elia Herrara has crafted a thoughtful menu using recipes passed down from generations in her family (she’s originally from Veracruz, Mexico). Think: four of the tastiest sounding ceviches you’ve ever seen; an elevated take on the classic Ceasar salad (which originated in Mexico, FYI) using pomegranate and chorizo; daily empanadas; poblano rice stuffed chayote (“vegetable pear”) with pipian and tlatonile sauces; and the mouth-watering list just keeps going.
Los Colibris is currently accepting reservations and is open in a soft-launch mode. Post June 18th, all exciting accoutrements will be ready for the palatable pillaging by what will surely be perrennial patrons.
