After an eight-week renovation, Toronto’s Oliver and Bonacini has reopened Canoe Restaurant & Bar, located on the 54th floor of the Toronto-Dominion Centre. The reopening coincides with the restaurant’s 25th anniversary, which first opened in 1995.
Canoe’s elegant style, understated décor and subtle accents were strongly influenced by architect Ludwig Mies van der Rohe. Over the last 25 years, Canoe has been heralded as a pioneer of modern Canadian cooking.
The restaurant has consistently aimed to define regional Canadian cuisine, with creative dishes that are a symbolic depiction of the country’s rich landscape and culture. Canoe’s culinary vision is currently driven by O&B Corporate Executive Chef Anthony Walsh, District Executive Chef John Horne, and Chef de Cuisine Ron McKinlay.

New dishes to Canoe’s dinner menu include Baffin Island Turbot ($46) with wild rice and buckwheat stuffed leek, pommes écrasées, sauce vin jaune and sea lettuce emulsion; Tamarack Farms Lamb ($50) with Jerusalem artichoke gratin, sunflower purée, wild licorice jus, samphire and nettle haché. An innovative eight-course chef’s tasting menu is also available for $120 per guest. In an effort to reduce waste and help build food security, all gross proceeds will be donated to Community Food Centres of Canada.
The Solid Design Creative team was tasked with the interior renovations. They opted to draw inspiration from the country’s varied landscape and put in the intricate details. A ceiling installation of mirrors and fibreglass lenses surrounds the perimeter of the dining room, giving the guest a different perspective of the city below.
The custom rugs’ patterns are intended for customers to get a sense of the gorgeous and one-of-a-kind Canadian landscape. Granite is used throughout as a representation of the rugged nature of the Canadian Shield. The Three Sisters mountain range in Alberta is also honoured along the east bar wall.
Canoe will continue to be open for lunch and dinner, Monday through Friday. The restaurant is closed on weekends for weddings and private events.
