Stepping into the month of April means celebrating holidays and festivals. Along with Easter, we have yet another special occasion: Thai New Year. The start of this new year is marked by Songkran, which is known as Thailand’s water festival. Although it might not be possible to celebrate with the usual fanfare, having a nice, comforting meal at home helps. And luckily, Chef Nuit Regular has got something delicious in store with PAI.
The Songkran feast by PAI restaurant features classic Northern Thai dishes. These include a Gaeng Hunglay, which is a Songkran curry with braised pork belly and a Northern Laab Salad. The feast also features a seasonal vegetable stir-fry and for dessert, a Pandan & Coconut Cake.
