One of Top Chef Canada‘s latest chefs to say goodbye (alongside Chef Jesse Vergen) is the owner of a Toronto-based food consulting company and will soon be opening his very first restaurant in Toronto. Let’s see what Chef Vittorio Colacitti had to say about his experience on Top Chef Canada…
How was your experience on Top Chef Canada?
Definitely a once in a lifetime experience. It was an amazing challenge and I am very grateful for the opportunity.

What were the biggest challenges and best rewards about being a part of the show?
There are many challenges, the biggest being isolated and under pressure for a long time. The rewards are huge! But the biggest reward was cooking for world class chefs such as David Chang and Morimoto!
What are you most excited about for the future?
I’m very excited for my new restaurant that is opening very soon! This is the next chapter in my career – I can’t wait!
Tell us about your audition video – what was the inspiration?
My audition video was inspired by the market, and showing how I roll on my days off.
Why do you think the team at Top Chef Canada picked your audition tape?
Because of my experience, and I think the team saw that I could excel.

Can you give any tips to chefs who aspire to be on Top Chef Canada?
I would say make sure you’re ready for the challenging days! Most importantly, if you get on, cook food that you love.
What is your favourite food/dish?
My favourite food is anything authentic from Thailand.
Finish this sentence. I love Toronto because…
…it’s been my home for most of my life! The food scene is always becoming more exciting! Also, I love the markets. Oh… and the island.
What are three things you can’t live without?
Pomegranate, Green Tea, and Fresh Kicks.
What are some of your favourite restaurants and why?
Thomas Keller’s restaurants, because the focus/execution are world class! I also love George in Toronto – Lorenzo is a great chef!
