The MICHELIN Guide restaurant has welcomed Zachary Darke as its new Executive Chef. Chef Darke’s exciting new menu additions bring a contemporary twist to French cuisine. Highlights include a refreshing tomato and camembert salad with a Niagara tomato vinaigrette, a flavorful chanterelle and corn dish, and a decadent seafood linguine featuring Fogo Island shrimp, crab, lobster butter, and cherry tomatoes.
There’s also the “Poulet Royal,” a half chicken prepared three ways and served with a trio of sauces, zucchini, and housemade brioche. These new dishes join Parquet’s beloved classics like Digby scallop crudo, steak tartare, spinach fettuccine, and duck confit. To complement the new fall dishes, Parquet’s sommelier, Lexi Wolkowski, has curated a selection of exceptional wines.
