BREAKING: We just heard that one of our favourite spots to head to when on the hunt for a foodie fix has recently launched a brand new fall menu along with a cluster of exciting new things in time for the seasonal shift.
Blacktail Florist‘s news comes in conjunction with other hot-off-the-press info: their below-the-deck sister establishment, Kanaka, is being transformed into an innovative test-bar where guests will be invited to get some culinary schooling thanks to Executive Chef Geoff Rogers.

The space that has long since been reserved for overflow (or as a place for patrons seeking out a tiki-style cocktail fix) has been transformed into a culinary playground for Rogers. This Top Chef Canada alumni has honed his skills at award-winning restaurants like Vancouver’s Fable Kitchen, as well as Calgary spots River Café, Market, and Muse over the past decade. He’ll hunker down and get to work creating unique twists on dishes inspired by local and seasonal offerings.
This subterranean lounge will stay true to its playful nature and serve as an extension for Chef Rogers to test out new fall one-of-a-kind menu items like jalapeño cheese puffs; a pig snack plate with chicharron, ear, bacon, and tail; and headcheese with ballpark mustard.
Back above ground, you’ll want to tuck into Blacktail Florist’s seasonally-inspired menu, featuring a farm-to-finish focus. The culinary team has applied a mix of traditional and modernist methods to cooking by incorporating elements of whole animal butchery (with Chef Rogers preserving his own produce).

Taste your way through new expertly-crafted plates such as Rangeland bison tartare with kale purée and spelt cracker; Farmcrest chicken breast with corn pudding, glazed heirloom carrots and purée; and albacore tuna crudo with pork belly, tonnato sauce and bonito flakes. Hungry yet?
In addition, Blacktail Florist guarantees you’ll find the perfect beverage to fit the mood thanks to their new head barman and craft distillery expert, Arthur Wynne (previously of The Union, Cascade Room, and UVA Wine & Cocktail Bar). He’s lined up a unique cocktail list featuring only local craft spirits made with regional flavours from Vancouver-based distilleries such as Odd Society Spirits, Deep Cove Distillers, and The Liberty Distillery.
How cool is that? Definitely worth a trip to Gastown stat.
