Boulevard Kitchen & Oyster Bar has taken up a revamped residency at the Sutton Place Hotel (one of our fave local boutique properties) and is set to wow foodies with its seafood-focused menu.
We were truly sad to say good-bye to the Sutton Place’s Fleuri Restaurant, with its renowned chocolate buffet, but are excited for Boulevard’s 290-seat space that promises European ambiance in a traditional-yet-modern setting. In addition to boasting a stylish dining room and seated oyster bar, there will also be a craft-cocktail and champagne bar, vintage-style lounge, private dining room, and expansive wrap-around outdoor patio. Champagne bar? Um… we need to make a standing reservation there now!
Leading the Boulevard team of culinary heavy hitters is Executive Chef Alex Chen, who represented Canada at the prestigious Bocuse d’Or culinary competition in 2013, placing in the top 10. Previously, Chen spent six years as the Executive Chef of the legendary Polo Lounge at the Beverly Hills Hotel and held the roles of Senior Sous Chef at the Four Seasons Hotel Chicago and Chef de Cuisine at the Four Seasons Hotel Toronto.

Joining Chen in the Boulevard kitchen will be Chef de Cuisine Roger Ma, who worked under world-renowned chef Daniel Boulud at his flagship restaurant Daniel in New York, and Pastry Chef Jason Pitschke, whose resume includes stints at Whistler’s Bearfoot Bistro and Vancouver’s Cioppino’s.
Vancouverites love their oysters, so, of course, Boulevard Kitchen & Oyster Bar had to hire the best shucker in the city: famed international shucker Robert Skinner is the new resident Oyster Specialist. “Oyster Bob” will oversee the expansive Oyster Bar, which boasts a dozen seats, an imported Italian Calcutta marble top, and a large selection of fresh-daily shucked oysters.
Boulevard understands the importance of procuring top-notch hospitality professionals. Steve Edwards (previously of Cibo Trattoria/UVA Wine & Cocktail Bar) brings years of front-of-house experience to his new role as the Director of Operations. Edwards’ illustrious team includes Maître d’ Brian Hopkins, Wine Director Lisa Haley, and Bar Manager Justin Taylor. This team is a virtual who’s who of the local restaurant industry!
