About Civil Liberties new pop-up
You’ve heard of draught beer but now get ready for draught cocktails. That’s right. The city’s (and the country’s) first-ever draught cocktail bar and bottle shop is now open for business. And it’s just as it sounds, where you get cocktails on tap, ready to go. Civil Liberties is behind this concept, which holds the title of Canada’s Best Bar by the World’s 50 Best.
The Civil Pours Draught Cocktail Patio Bar and Bottle Shop Pop-Up serve the cocktails in keg and ready-to-pour bottle formats. The space has opened with a 50-seat enclosed patio at 866 Bloor Street West.

Customers will have the chance to try Civil Pours kegged cocktails, available on tap, for the duration of the pop-up. The cocktail menu includes an Old Fashioned, Espresso Martini, Margarita, Whiskey Sour and Jalapeño Margarita.
“We’re excited to give our guests and peers a sneak peek into how we’re tapping into the leading edge of cocktail science and technology,” Nick Kennedy, co-founder of Civil Pours and owner of Civil Liberties Bar, said in a press release statement.
So how do they do it? It’s the use of proprietary vacuum-distillation techniques that helps the cocktails retain the flavour even within the kegged and bottle formats.
Want to get a bottle of your favourite one to take home? There’s an on-site Cocktail Bottle Shop, which is selling Civil Pours ready-to-pour bottles. The available options include Old Fashioned, Espresso Martini, Margarita and Whiskey Sour. The brand is also doing a run of limited-edition Civil Pours merchandise. The collection features t-shirts, baseball caps and tote bags.

The pop-up will be operating until September 10. It’s open Wednesday to Friday from 6 pm and on Saturdays and Sundays from 2 pm.
