Miku’s Italian Truffle Kaiseki Dinner in collaboration with the Truffle Kings

$225One of Toronto’s hottest Japanese restaurants, Miku Toronto, is teaming up with Truffle Kings, renowned suppliers of luxurious foods, to present an unparalleled gastronomic experience. This extraordinary collaboration, in conjunction with the wine connoisseurs and founders of GrapeBrands Fine Wines & Spirits, aims to redefine the parameters of fine dining by blending culinary techniques and flavours from both Italian and Japanese traditions.
Scheduled for a single evening on January 17, 2024, at Miku Toronto (105-10 Bay St.), the collaboration is priced at $225 before tax and gratuity.
Attendees can anticipate a meticulously curated menu that harmonizes Italian white truffles with Miku’s distinctive Japanese Kaiseki, complemented by exquisite pairings with top-tier Italian wines.

Miku’s chef de cuisine, Junnosuke Fujikawa, and his culinary team are eager to explore the harmonious blend of delicate Kaiseki techniques and the bold flavors of Italian cuisine in a six-course menu.
The evening’s culinary journey begins with an Amuse course featuring Bruschetta that incorporates prosciutto, myoga sauce, Tuscan olive oil, and Japanese shokupan bread. Subsequently, guests will be treated to three vinaigrette appetizers: sea bream ceviche with orange vinaigrette, caper berry, and pink pepper; truffle vinegar sunomono salad with cannellini bean, persimmon, julienne daikon, valentine’s radish, and truffle form; and shirako ponzu (cod milt) with yuzu ponzu vinaigrette, grated daikon, and chive.
Moving onto the main courses, chef Junnosuke Fujikawa will serve monkfish in a butter sautée with porcini dashi broth and chrysanthemum, followed by a Hokkaido scallop, mussel, shrimp and squid with a squid ink sauce and truffles. To end off the night, guests will be served wild boar cured in kelp for twenty four hours with truffle mashed potatoes, and Wagyu Sukiyaki Don with light seared A5 Awaji wagyu, shaved white truffle, sweet soy marinated egg yolk and Japanese rice.
